Add the corn syrup, sugar and water. Mix until combined and then cover and heat until 245 degrees.
Allow to cool slightly and then add to the bloomed gelatin.
TIP: Bloom the gelatin while the sugar mixture is "cooking"
With the bloomed gelatin in the mixer, add in the hot sugar mixture and beat slowly. Once all the sugar is in the mixing bowl, begin beating on high and continue to beat until soft peaks form.
The mixture will resemble marshmallow fluff.
Flip your set marshmallow block into a mixture of powdered sugar and cornstarch.
Make your marshmallows into your desired shape and then store or serve.
