Savory Parmesan and Herb French Toast

This Savory Parmesan and Herb French Toast is a twist on the classic sweet version. Using the same staple ingredients, cheese and herbs is added in place of the sugar and maple syrup.

Ingredients

  • Bread: The best bread for this recipe will be a thick-cut brioche bread. It’s light, airy and a little springy. If you are out of brioche, or can’t find it, you can also use sourdough or french bread instead.
  • Eggs: Eggs are a primary ingredient in any kind of french toast. The eggs and milk combine to make a custard-y mixture that fries up almost like a soufflé. Save some eggs to fry and top your French Toast with the fried eggs when serving.
  • Milk: Adding whole milk to this french toast will create the perfect mouthfeel when taking that first bite.
  • Parmesan: Adding a hefty cup of Parmesan cheese will add a punch of umami flavor to your french toast. It will also add a slight cheese pull to your toast once it is slightly cooled and plated.
  • Herbs: I minced french Thyme and Oregano for this recipe, but you can use your favorite herbs such as Dill, Parsley or even Mint in this Savory French Toast.
  • Toppings: There are a couple different ways to serve your Savory Parmesan and Herb French Toast. I suggest that once the toast is on serving plates, to top with a generous dollop of creme fraiche, and then to place a fried egg on top and then finish with finely chopped chives. Delish!

How to Make Savory Parmesan and Herb French Toast

In a shallow baking dish, add the eggs, milk, mustard, Parmesan, Oregano, Thyme, minced garlic, salt and pepper. Whisk all ingredients together.

Make the French Toast by frying it in a little butter until evenly browned on both sides.

Take the slices of bread and press them into the egg mixture. Let the bread completely soak through.

While the bread is soaking, take a large skillet and place it over medium heat. Add nobs of butter to the pan and let it melt.

Take the soaked bread and carefully transfer to the hot buttered skillet. Let the french toast fry for 3-4 minutes a side, or until nicely browned.

While the bread is frying, soak the remaining bread slices into the remaining egg mixture.

Flip the french toast and fry the other side, until nicely browned. Transfer to a large serving dish.

Add more butter to the hot skillet if it looks dry, then add the last slices of bread to the skillet and fry for 3-4 minutes on each side, or until evenly browned. Transfer to the serving dish once finished.
