Protein Chicken Alfredo Fettuccine

This Protein Chicken Alfredo Fettuccine will satisfy any carb craving while delivering a protein and veggie packed meal. This dish is a great way to use up any leftover chicken or veggies.

Cottage Cheese: Use your favorite cottage cheese. I generally use a low-fat or no-fat cottage cheese, but you can use your favorite unflavored type. You can even use lactose-free cottage cheese.

Chicken: This recipe is a great way to use up that leftover rotisserie chicken you picked up from Costco or Safeway.

Fettuccine: Truthfully, you can use your favorite noodle for this dish. I like a Fettuccine noodle since it is a little wider than your standard spaghetti which makes it an ideal vehicle for a creamy sauce.

Green Peas: Defrost green peas in order to add them directly to the pasta.

Garlic: Adding garlic cloves to your sauce will make it garlicy and savory.

Parmesan cheese: Freshly-grated Parmesan cheese is a great way to bump up this noodle dish. If you’re short on time or ingredients, feel free to omit the cheese.

Spices: Incorporate garlic power and onion powder to this dish to compliment the flavors. Another option is to add cayenne pepper (or another spice) to punch it up a bit.

Olive oil and Butter: Adding a bit of fat to your sauce will make it creamy without being too heavy. Adding olive oil to the sauce will help the sauce emulsify and adding the butter to the noodles will add flavor.

How to Make Protein Chicken Alfredo Fettuccine

Add the cottage cheese, garlic cloves, olive oil and garlic and onion powder to a food processor. Process together until smooth.

How to Reheat Cottage Cheese Alfredo

After storing the leftovers in the fridge overnight, you might notice that the sauce hardened when it’s time to reheat.

The best way to soften the sauce is to reheat in the microwave for about a minute, or until you are able to stir the noodles. Then add in some butter, milk or water and microwave for another minute.

Take the bowl out of the microwave and give it a good stir. If the sauce is not the creamy consistency you’re looking for, add more butter, milk or water and continue to stir together.

Since this dish is light on fat, it will solidify as it gets cold. One way to combat the hardening of the sauce is to emulsify more olive oil in with the cottage cheese sauce.
