These healthy zucchini fries are so delicious you won’t even be able to tell that they are baked and not fried! The secret to a nice “crust” that will be crunch out of the oven is turning the oven up to 425 degrees. You can also use an air fryer if you have one on hand.

You can dip these fries into almost anything: ketchup, mayo, but my favorite is a garlic aioli. Try my garlic aioli for these healthy zucchini fries. You can also serve this dish with a lemon wedge and parsley sprinkled on top to add some acid to the dish.

I always make a whole bunch of these fries since they tend to go quickly. They make a great appetizer for a party or just for your family for dinner.

Directions:

1). Clean and quarter your zucchinis and preheat your oven to 425 degrees. Spray a baking sheet with oil.

2). Place your flour on one plate, beat your eggs and place them on another plate and mix your breadcrumbs and parmesan together on another plate.

Make sure you have stations ready for your fries: a plate for flour, a plate for eggs, and one for breadcrumbs.
