
Looking for a light and easy salad for dinner? This Chinese chicken salad recipe only has a few ingredients and it’s super quick to throw together. It’s also pretty light on carbs and it’s easy to measure how many calories you’re eating when you’re making this dish.
Chinese chicken salad is a crowd-pleaser in my house since it’s something that is a bit different than our normal meals and doesn’t leave you feeling full and bloated at the end of the meal. You can use up any leftover rotisserie chicken with this salad.
I use a mix of romaine lettuce and cabbage. Not only does Napa cabbage add a great crunch to the salad but cabbage is full of nutrients you might not otherwise get during your day. Cabbage is also a very affordable produce item that will stretch your romaine farther.

When it comes to dressing, there are many different options for you to choose from. My personal favorite is the Soy Vay Toasted Sesame dressing. Tonight I tried two different dressings: Galeos Miso & Chia Seed Sesame Seed dressing and Joey D’s Chinese Chicken Salad dressing. Both are great affordable options and are sold at Draeger’s and Safeway.
You can add almost anything to this dish to make it a colorful salad full of nutrients. Strawberries in the fridge? Go ahead and throw them into your salad bowl. It’s easy to customize this salad to your liking.
