How to Make Bitter Melon with Egg
Always prepare your ingredients first. Lay out the bitter melon, eggs and condiments that will be going into the dish.
Prepare your bitter melon. Wash and cut the gourd in half and scrape out the seeds. Chop the ends of the bitter melon off and then chop the gourd into bite-sized pieces.
Now that the bitter melon is prepared, set it aside.


Crack the eggs into a small bowl and whisk until the whites and yolks are combined.
Add about one tablespoon of the neutral cooking oil to a frying pan and allow the pan to get hot over a medium-high flame. Once the oil is hot, add the eggs and scramble quickly.
Once the eggs are just set, transfer to a clean bowl and set aside.
In the same pan, add the rest of the oil and keep the flame at the same heat. Add the bitter melon and quickly fry for about 2 minutes. Then add the rest of the sauces and toss until the melon becomes browned on each side – about 10 minutes.

Once the melon is cooked, add the eggs back in and toss together. Taste and add more sauces if necessary.
