Ingredients

Oyster Sauce: A little sweet and little tangy, oyster sauce infused into both the egg and the melon beautifully.
Mirin: Also known as a rice wine for cooking, all of the alcohol will cook off and you will be left with an acid that adds another element of zest.
Sugar: Adding some sweetness will round out the simple ingredients of the classic asian breakfast.
Soy Sauce: Add umami with soy instead of adding salt to season and bring out the flavor of the dish.

How to Make Bitter Melon with Egg

Always prepare your ingredients first. Lay out the bitter melon, eggs and condiments that will be going into the dish.

Prepare your bitter melon. Wash and cut the gourd in half and scrape out the seeds. Chop the ends of the bitter melon off and then chop the gourd into bite-sized pieces.

Now that the bitter melon is prepared, set it aside.

Crack the eggs into a small bowl and whisk until the whites and yolks are combined.

Add about one tablespoon of the neutral cooking oil to a frying pan and allow the pan to get hot over a medium-high flame. Once the oil is hot, add the eggs and scramble quickly.

Once the eggs are just set, transfer to a clean bowl and set aside.

In the same pan, add the rest of the oil and keep the flame at the same heat. Add the bitter melon and quickly fry for about 2 minutes. Then add the rest of the sauces and toss until the melon becomes browned on each side – about 10 minutes.

Once the melon is cooked, add the eggs back in and toss together. Taste and add more sauces if necessary.

  • 2 2 bitter melons, chopped and seeds removed

  • 2 2 eggs, whisked

  • 1 tbsn 1 oyster sauce

  • 1 tbsn 1 sugar

  • 1 tbsn 1 Mirin

  • 1 tbsn 1 soy sauce

  • 1/2 tsp 1/2 white pepper

  • 3 tsp 3 neutral cooking oil, divided

Directions

  • Prepare the bitter melon – cut in half and remove the seeds. Chop the bitter melon into a desired size. Crack eggs into a bowl and whisk. Set aside.
  • Add one tsp of oil to a frying pan over medium high heat and add the eggs. Scramble and then set aside once just cooked.
  • Add the rest of the oil to the pan and keep over medium-high heat. Add the bitter melon and quickly fry for 2 minutes. Then add the mirin, soy, oyster sauce, white pepper and sugar to the pan. Toss and fry until the bitter melon begins to absorb the sauce – it should cook in about 10 minutes.
  • Add the eggs back in and toss together. Serve with rice.
